Mustard Oil
Potatoes
Cauliflower
Carrots
Cumin Seeds

Cinnamon Stick
Star Anise
Black Pepper
Black Cardamom

Bay Leaf
Ginger

Red Chilli Powder
Turmeric Powder
Green Peas

Method:
- In a pan heat mustard oil and bring it to a boiling point. Allow it to cool before you start cooking.
- Fry potatoes, cauliflower and carrots in the oil and keep it a side.
- In the same oil add cumin seeds, clove, cinnamon stick, star anise, black pepper, black cardamom, coriander seeds, bay leaf, finely chopped ginger and garlic, onion, salt to taste, green chillies along with red chilli powder and turmeric powder.
- Mix these masalas well and add green peas along with tomatoes.
- Add rice along with water and cook it for 15 minutes.
- Check on rice and sprinkle water if required.
- Add coriander leaves and on a low flame cook it for 5 more minutes.
- Serve with raita and enjoy Veg Tahiri!
